Five Star Hotel Hot Chocolate Cake Recipe
Ingredients
Cake:
- 1 cup (240ml) boiling water
- 1 cup (85g) unsweetened cocoa powder
- 1 cup (225g) unsalted butter, softened
- 2 cups (400g) granulated sugar
- 4 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 3/4 cups (345g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (240ml) buttermilk, room temperature
Ganache:
- 1 cup (240ml) heavy cream
- 8 ounces (225g) high-quality dark chocolate, finely chopped
- 2 tablespoons unsalted butter, softened
Chocolate Sauce:
- 1/2 cup (120ml) heavy cream
- 4 ounces (115g) high-quality dark chocolate, finely chopped
- 2 tablespoons unsalted butter
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
Instructions
Cake:
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together boiling water and cocoa powder until smooth. Let cool.
- In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in vanilla.
- In another bowl, sift together flour, baking powder, baking soda, and salt.
- Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, beginning and ending with the flour mixture. Mix until just combined.
- Stir in the cooled cocoa mixture until smooth.
- Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
Ganache:
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
- Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for a minute, then stir until smooth.
- Add the butter and stir until melted and combined. Let cool to room temperature.
Chocolate Sauce:
- In a small saucepan, combine the heavy cream, chopped chocolate, butter, and sugar. Heat over medium-low heat, stirring constantly, until the mixture is smooth and well combined.
- Remove from heat and stir in vanilla extract. Let cool slightly.
Assembly:
- Place one cake layer on a serving plate. Spread a generous amount of ganache over the top.
- Place the second cake layer on top and spread the remaining ganache over the top and sides of the cake.
- Drizzle the chocolate sauce over the top of the cake, letting it drip down the sides.
- Let the cake sit at room temperature for at least 30 minutes before serving to allow the ganache to set.
