Gourmet Mushroom Risotto
Ingredients:
- 1 cup Arborio rice
- 2 cups chicken broth
- 1 cup white wine
- 1 cup mushrooms (sliced)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1/2 cup Parmesan cheese (grated)
- 2 tbsp butter
- Salt and pepper to taste
Instructions:
- In a large pot, melt butter over medium heat. Add onions and garlic, sauté until translucent.
- Add mushrooms and cook until they release their moisture.
- Stir in the Arborio rice and cook for 2 minutes to lightly toast the rice.
- Pour in the white wine and cook until it has evaporated.
- Begin adding the chicken broth, one cup at a time, stirring constantly until the liquid is absorbed before adding more.
- Continue this process until the rice is creamy and cooked through.
- Stir in the Parmesan cheese, season with salt and pepper, and serve hot.
